Sausage Peppers Penne

Last night's dinner was FABULOUS!!!  I had to share this healthy recipe with everyone!  My kids request this dinner (AMAZING BUT TRUE!)  Seasoned with Italian Sausage and full of vegetables this pasta dish tastes great and is good for you too!  Last night I was out of green bell pepper, so I only used red and yellow.  I also substituted mozzarella cheese for the Parmesan.

Sausage Peppers Penne
1 lb turkey Italian Sausage links (I like is hot, but my kids prefer mild)
1 lb penne pasta, cooked
3-4 bell peppers, red, green, yellow & orange, thinly sliced
1/2 sweet onion, thinly sliced
2 cloves garlic, minced
1 can (15 oz) diced tomatoes
1 can (15 oz) tomato sauce
2 Tablespoons Italian Seasoning
1/4 cup Parmesean Cheese

Cook pasta according to package directions.  Drain & keep warm.  Set aside.

Meanwhile, sear sausage in a large skillet over medium high heat, turning to brown each side.  After each side has been browned, add one cup water to the sauce pan and cover quickley.  Reduce heat to meduim low and continue cooking for 10 minutes longer or until the sausage is no longer pink.  Remove from heat.  Drain any excess water.  Cut links into 1- inch peices.  Set aside.

Add sliced peppers, onion, and garlic to the hot skillet.  Cook for 4-6 minutes or until peppers are crisp tender.  Add sausage, tomatoes, tomato sauce, and seasoning.  Cook and stir for 1-2 minutes until heated through.

Place pasta in a large bowl.  Pour sauce over the pasta.  Sprinkle with Parmesean. 

Serves 8
